Agar agar is a biological binder and gelling agent, similar to gelatin, but more powerful and completely vegan, and therefore very popular in the vegetable kitchen.

Agar agar is made from red seaweed and is perfect for making vegan cheesecakes or jelly. It has been used for a long time in Asian, and in particular Japanese cuisine, but has also found its way to the West in the meantime.
