The root system of this plant is highly developed, therefore it is able to draw on the deepest and most nutrient-rich layers of the soil unlike modern grains with a poorly developed root system that feed only in the most superficial layers and therefore more poor in the soil.
Couscous is a typical North African food. The couscous production process retraces the traditional stages of preparing this product, inspired by how originally Maghrebi women did it at home. In fact it is nothing more than a mixture of semolina and water, which is then steamed and finally dried with hot air.
